26-year-old Ellis and his brother Corin have been chefs since they were 17. Starting with a range of sweet chilli sauces, they established Rennoldson’s, an artisan food and beverage producer.

Ellis also set up a street food pop-up with fellow chef Pedro Criddle, to share their love of ‘low and slow’ cooked barbecue food. ‘Smoke and Glaze’ has now found a permanent home in The Pipe and Slippers, a local pub.

His Instagram food blog shares images of cutting edge food presentation from all over the world. Ellis aims to publish a book of these photos one day, themed on what he calls “an insight into the mind of a chef.”

Using ethically sourced, local, seasonal ingredients wherever he can, Ellis believes that flavour is king, “Without flavour at a dish’s core, all the bells and whistles fall flat”, he explains.

A Miami native, Eucepe Puntriano has been the chef at Meat Market for the last five years. The restaurant is a steakhouse with a Peruvian/Japanese twist and Chef Cepe loves watching customers enjoy his creations. The team prepares everything using the freshest ingredients possible and new specials are created on a daily basis – Chef Cepe believes that a daily challenge makes him a better chef!

His passion for food developed at a young age whilst watching his parents cook and Chef Cepe always knew that one day he would become a chef. “I knew I belonged in a kitchen!” he says. His ambition is to own his own restaurant at some point in the future.

Chef: Matt Noonan

A 34-year-old father of two, Matt describes himself as a fan of anything from the fringes of society, including extreme sports and rock and roll!

He is currently Head Chef at Stanwell House Hotel in Lymington. The two AA Rosette fine dining restaurant Etain showcases British à la carte dining at its best. Dishes boast an elegant simplicity and style with the majority of produce sourced locally.

Overlooking the high street, Burcher & Co. is an informal dining space where Matt showcases the best of New Forest ingredients. Locally caught game, fresh fish from the Solent and seasonal vegetables all feature on the menu.

Matt describes his food style as pretty simple. “I like bold flavours and vibrant colours. Good presentation is always a must”, he says.

An engineer by day who spends every spare minute cooking, 28-year-old Alex from Winchester is a self-taught home cook who appeared on BBC One’s MasterChef in 2017.

Alex can trace his passion for ingredients back to his childhood, when summers were spent picking fruit and vegetables in his grandfather’s garden. His passion for cooking has grown since leaving university in 2011, fuelled by an expanding collection of cookbooks, the more obscure the better!

Alex’s vegetable orientated cooking is inspired by a wide range of cuisines, particularly Japanese, Indian and Middle Eastern. He shares his dishes on Instagram and with guests at Club Epicure, a supper club he runs with his partner Hetty. “Although a dish has to look appealing for Instagram, it’s important to me that it tastes good too. One of my pet hates is style above flavour!”, he says.
